
I love a nice cup of coffee. More so with a nice flapjack or a biscuit. Thus, I was on the lookout for a hybrid of the two, a chewy oatmeal biscuit. As always, I was looking for a healthier but no less tasty option to enjoy and this one is well worth sharing. Not to mention it’s super easy, cheap and quick to make!
One tray (13 medium sized cookies):
- 1 small banana (or 1/4 cup applesauce)
- 60g honey, or syrup if you prefer (3 TBSP)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 60g plain flour (1/2 cup)
- 60g porridge oats (3/4 cup)
- 40g raisins (1/4 cup)
- Optional extras: Dessicated coconut / Chocolate chips / Dried fruit / Nuts (2 TBSP)
Method:
Preheat oven to 175C and line a baking tray with baking paper
Mash banana and combine with honey and vanilla
Combine dry ingredients
Stir dry ingredients into wet ingredients and drop spoonfuls of the mixture onto the lined tray
Bake for 8 minutes for softer cookies or 15 for slightly tougher texture. They will harden a little when cooling.

The honey, fruit and oats are all excellent sources of energy and helpful for recovery also so these are great to enjoy any time you like! To add some protein to the snack, pair them with greek yogurt which will make the cinnamon and honey flavour really stand out and cut the sweetness slightly.
