Bar Raising Brownies

I’ll just drop these here… There is nothing particularly healthy about them except the healthy amount of chocolate but hey, you’ve got to treat yourself sometimes and if you’re gonna treat yourself, these are a treat worth their calories.

This recipe has been passed on to me and passed on by me and is an absolute winner wherever it ends up. If you need to make friends, this is the way to do it.

What you need:
*This makes 1 8*8” pan or roughly 9 good sized brownies although I sometimes divide it into 36 little brownie bites for people to grab on the go

  • 80g butter
  • 80g dark chocolate (70% +)
  • 2 eggs
  • 200g brown sugar – I have done this with both light and dark brown sugar as well as a combination, both work well, honestly I’d struggle to tell the difference
  • 1 tsp vanilla extract
  • Pinch of salt
  • 100g flour
  • 15g cocoa
  • Optional extras: Chocolate orange, M&Ms, Oreos, Pecans, up to you really, I have yet to go wrong with any sweet additions to this.

What to do:

  • Preheat your oven to 180C
  • Chop the chocolate and butter into small-ish chunks and melt – either in the microwave or in a bowl sitting over a pan of boiling water. As they melt, stir together until fully incorporated.
  • In the meantime beat the eggs, sugar, vanilla extract and salt until doubled or tripled in size.
  • Sift the flour and the cocoa over the egg mixture then pour in the melted chocolate.
  • Gently fold the mixture together until everything is fully incorporated and there are no lumps of flour.
  • Pour half of the mixture into a tin lined with baking paper, top with any extras if using and cover with the rest of the mixture.
  • Bake at 180C for 20-25 minutes. Start checking at 20 minutes and remove from the oven as soon as the knife comes out clean.

While this is baking have have a little laugh at me, when things go wrong. The brownies still tasted amazing though…
