Korean Sesame Chicken

I love sweet and savoury, I love Asian flavours, I love healthy food. This one ticks all the boxes.

It does require a few more ingredients than usual but they are all well worth having in the cupboard and you will use them if you love Asian food!

Ingredients (2 servings):

  • 300g chicken breast
  • 3 tbsp rice wine
  • 1 tsp ground ginger
  • 1 tbsp corn starch / flour
  • 1/2 tbsp sesame oil
  • Broccoli (or vegetable of choice) and rice (70g/serving) to serve

Sauce:

  • 1 tbsp (20g) honey
  • 1 tbsp (12g) brown sugar
  • 1 tbsp soy sauce
  • 1 tsp garlic – minced, powdered or paste
  • 4 tbsp (65g) ketchup
  • 1 tsp chilli bean paste (or 1/2 tbsp sweet chilli sauce)
  • 1 tbsp toasted sesame seeds* & spring onions

*Toast in a dry pan on medium heat until starting to brown

Method:

  1. Marinade the chicken in wine and ginger then coat in flour.
  2. Heat up the oil in a wok or frying pan and add the chicken mixture.
  3. Stir fry for 5-10 minutes until chicken is cooked.
  4. In the meantime, combine all sauce ingredients and bring to a simmer in a small pan.
  5. Once the chicken is cooked, turn the heat under the sauce up until bubbling then pour the sauce over the chicken and stir to coat.
  6. Serve topped with sesame seeds and spring onions.
  7. Serve with rice and broccoli
