Swift & Simple Stir Fry

This isn’t as much a recipe as it is a reminder that you can make dinner that’s healthy, tasty, easily adjustable to fit your macros and super cheap in 10 minutes or less.

As I treated myself to street food on my adventure today, this one is going to be just veg and meat. I do like using bean sprouts in place of noodles as they add nice texture and crunch and make sure you get a nice big bowlful to eat.

P.S. Get a BIG wok. Cause stir fries are always vegetable heavy and veg take a lot of space especially if you are trying to mix things up. I learnt this the hard way trying to improvise in a frying pan…

Serves 2 (Or conveniently 1 dinner & 1 lunch portion)

What you need:

  • Spray oil
  • 1 Stir fry veg pack – My favourites are ones with edamame beans for the extra protein goodness or crunchy pepper ones but it’s up to you really. You can get these in any supermarket.
  • 300g Chicken/Pork/Beef/Tofu – Pick your protein, cut into small chunks. If getting beef, sizzler/flank/thin cut steak is really nice and for pork, pork tenderloin or pork medallions work great.
  • 1 pack of bean sprouts (usually 250g)
  • 1 pack of stir fry sauce OR homemade stir fry/teriyaki sauce (Soy sauce, honey, brown sugar, giner&garlic paste)

What to do – This one’s pretty straight forward:

  • Spray some oil into the pan
  • Add your protein and stir fry for 5 minutes on medium to high heat. Season with salt and pepper.
  • If you are making your own sauce, mix up 1/4 cup soy, 1 TBSP honey, 1 TBSP brown sugar and 2 tsp garlic and ginger paste (or fresh minced garlic and ginger).
  • Add the vegetable mix, stir and keep frying on medium heat for another 3 minutes.
  • Add the bean sprouts and the sauce, stir well and fry for further 2 minutes to heat through.
  • Serve and add soy sauce to taste if desired.

Breakdown – Per serving (Serves 2). If using as Dinner and lunch you may want to have 2/3 for dinner and 1/3 for lunch and adjust calories accordingly.
