Cornflakes Katsu Curry

I like curry.
I like fried chicken.
I also like healthy food.

Using cornflakes, bran flakes or otherwise crispy cereal instead of breadcrumbs came as a real revelation to me. I tried baking breadcrumbed meat previously but it never quite turns out right – THIS HOWEVER! It is crispy, healthy, easy and cheap to make and tastes really good. The corn flavour arguably adds another dimension to the dish as well.

Curry Ingredients (3 servings):

  • 2 onions
  • 2 carrots
  • 3 garlic cloves
  • 1T flour + 2T curry powder
  • 500ml water/stock
  • 1T honey + 2T soy sauce
  • 1 bay leaf (optional)
  • 1-2T garam masala

Chicken:

  • 600g (3-4) chicken breasts
  • 100g yogurt + 1 egg
  • 60g cornflakes / bran flakes

To Serve:

  • 210g rice (70g per portion)
  • You could also serve with potato, sweet potato, naan or rice crisps
  • Going low carb? No worries! It’s perfectly edible without any of these sides!

Method:

  • Preheat the oven to 200C
  • Slice onions, garlic and carrots and saute until softened
  • Add the flour and curry powder and stir through
  • Add water/stock, honey, soy and bay leaf, simmer for 15 minutes
  • Mix egg and yogurt, cover the chicken breasts then coat in crushed cornflakes
  • Bake for 20 minutes
  • Cook the rice / potatoes
  • Blend the curry and stir in garam masala
  • Serve and enjoy
